Mushroom & Chicken Cutlets

Blueberry Crisp

 Note: any fruit can be substituted

One cup flour
One cup sugar
One egg
Two teaspoons baking powder

Mix until crumbly.

Place layer of blueberries in an ungreased 11x13 pan. Top with mixture above.  Melt 6 tablespoons of butter and drizzle over the top.  Sprinkle 2 tablespoons brown sugar and one teaspoon cinnamon over the top. Bake at 350 deg. for 30-40 minutes.

Mushroom & Chicken Cutlets

6 chicken breasts, skinned and boned
3 eggs well beaten
salt to taste
garlic powder
1 cup bread crumbs
¼ to ½ pound butter
½ pound fresh mushrooms, sliced
3 slices deli-thin Muenster or Swiss cheese
½ cup chicken broth

Add seasonings to eggs.  Immerse chicken in egg mixture for one hour. Roll chicken in crumbs. Sauté in butter until golden. Place in large casserole dish. Reserve butter. Sauté mushrooms in reserved butter. Sprinkle mushrooms over chicken. Place ½ slice of cheese over each chicken piece.  Pour broth over all and cover with foil. Bake at 350 for 30 minutes. Remove foil for last 10 minutes of baking. Pour or squeeze lemon juice over chicken just before serving.

Alarm Chili

1 lb. Ground beef
1 med. Onion, chopped
3 garlic cloves, chopped
1 large green onion, chopped
2 can (28 oz.) crushed tomatoes
2 teaspoons oregano
2 teaspoons cumin
3 tablespoons chili powder
2 tablespoons unsweetened cocoa powder
2 teaspoons sugar
1 teaspoon crushed hop pepper
1 teaspoon Tabasco sauce
1 can (15 oz) Kidney beans, drain liquid.

Cook the meat until it is well done. Pour off fat. Sauté the onion, garlic, and green pepper with ½ cup of the crushed tomatoes for 3 minutes. Add the oregano, cumin, chili powder, cocoa powder, sugar, hot pepper, and Tabasco sauce, and cook for 3 more minutes. Add the beans, meat, and the remaining crushed tomatoes, and cook together for 25 minutes over low heat.
Yield: Makes 8 one cup servings.
Each serving has 252 cal.

2 cups butter 4 cups flour
2 tsp. baking soda 2 cups sugar
5 cups blended oatmeal 1 tsp. salt
24 oz. Chocolate chips 4 eggs
8oz. Hershey Bar (grated) 2 tsp. Vanilla
tsp. baking powder 2 cups brown sugar
3 cups chopped nuts (your choice)  

 

Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies. Don't forget to eat them!!
